December 24, 2012 Host Kathleen Marshall Speaks With Reah Roberts, Owner of Arise Bakery, About All Things Gluten-Free

Reah Roberts of Arise BakeryPeople go gluten-free for a variety of reasons.  Those with celiac disease can suffer serious health consequences from ingesting even a molecule of gluten.  Others have a gluten-intolerance that results in a cascade of inflammatory symptoms if they eat gluten-laden food.  And still others go gluten-free even if they don’t have to.

Reah Roberts, owner of Arise Bakery in Arcata, is an inspired and talented baker of gluten free-baked goods.  From cookies to quiche, she uses as many organic, locally sourced ingredients as she can.

Teff Cookies

These cookies are wonderful any time of the year, but especially during the winter holidays. If you use the winter squash, blend it after roasting, adding water if necessary to make it a similar texture as applesauce.

3/4 cups coconut oil, melted and cooled. or butter, room temperature.

1 1/8 cups sugar (evaporated cane juice or coconut sugar)

1/2 cup applesauce or roasted winter squash

1 Tb gluten free vanilla

 

1 3/4  cups Brown Rice flour

1/4 cup Teff flour

1/4 cup flax meal

1 tea baking soda

1 tsp salt

1/2 Tb psyllium husk or xanthan gum

1 Tb cinnamon

1/2 tea cardamon

1/2 tea ginger

 

 

Preheat oven to 325

Mix oil or butter with sugar, add applesauce and vanilla.  Mix dry ingredients together.  Add wet to dry, and scoop out small balls of dough onto a baking sheet.  Bake for 16- 18 minutes.  Remove from oven and cool on tray for 10 minutes.  Sprinkle with powdered sugar.  Enjoy!!!
